GRILLED CHICKEN STUFFED WITH BASIL, TOMATO & MOZZARELLA

Ingredients:

140g boneless, skinless chicken breast halves
coarse salt
Freshly ground pepper
1 garlic clove, minced
1tsp coconut oil

For The Stuffing:

6 fresh basil leaves, plus more for garnish
1 tomato, sliced
30g mozzarella, grated

Method:

Butterfly chicken breasts: Starting on one long side, cut breasts almost in half horizontally. Sprinkle with salt & pepper.
Heat coconut oil in pan until medium-hot. Stuff the chicken with basil, tomato & mozzarella and secure with toothpicks or short skewers.
Grill chicken breasts, turning once, until golden brown on both sides and no longer pink in the middle, about 15 minutes. Place on a clean serving platter; garnish with basil. Remove toothpicks or skewers before serving.
